In 2023 our partners at White Labs innovated a new culture release program they call The Fermentation Society, whose members have access to exclusive cultures from their Vault. They’ve put out some great offerings over the last year, and we’re honored that they asked us to be a part of their Spring 2024 release.
When we moved to Wisconsin, we wanted to release a new culture to celebrate the German brewing heritage of the area. Since we already have a great Kolsch strain and two unique German lager strains, we trained our eyes on a creating a new hefeweizen culture. After testing many iterations of yeast blends to achieve the desired balance and complexity, we ended up with real gem: Von Degenberg Hefe Blend.
