In 2016, we pioneered our TYB BETA™ culture program, the first-of-its-kind in the industry and the foundation of how we develop new cultures. These are brand new cultures fresh out of the front end of isolation and small scale fermentation trials, cultures we think have a great deal of promise to add real diversity to the brewer’s toolbox. The program is an ever evolving lineup in which brewers can gain access to novel cultures that have never been released, provide valuable feedback and help us drive the process all the way from early evaluation to possible promotion to core offering. While not every culture is promoted, many cultures have graduated from this program over the years to become regularly available offerings, produced on a regular basis by our partners at White Labs.

This program has allowed us to gain invaluable data with respect to what brewers think of some of our recent standout isolates and blends, and we welcome both homebrewers and craft brewers to participate!

VON DEGENBERG HEFE BLEND

This culture pays homage to the history of wheat beer in Germany, and celebrates an individual who was granted the authority to violate the norms and traditions of brewing at the time, largely set by the German Purity Law.

In the tradition of bucking the norm, Von Degenberg Hefe Blend also goes against what brewers might expect in a hefeweizen culture. Expect a perfect balance of the typical hefeweizen esters and phenols from the two "traditional" brewing strains, augmented with more complex phenols and enhanced aromatics contributed by two characterful and fragrant wild yeast.

TYB Beta™ Process - from collection to culture release

Step 1 - Source Collection - collection of microbes from bioprospecting, spontaneous fermentations, or packaged beers containing unique “house” yeast

Step 2 - Liquid Enrichment - apply selective pressure(s) to encourage growth of desired organisms while inhibit others, making downstream isolaiton work more manageable

Step 3 - Primary Plating & Enrichment Plating - isolate out single strain cultures for analysis, continuing any selective pressure(s) applied during liquid enrichent

Step 4 - Small Scale Props and Deep Freeze Banking - prep cultures for test fermentations and creating permanent stocks of the pure cultures

Step 5 - Small Scale Fermentation Trials - collect initial test data across multiple fermentation temperatures and wort compositions to determine each culture’s fermentation kinetics and organoleptic/sensory contribution

Step 6 - TYB BETA™ Release - small scale release of promising cultures that can be either single strains or blend of organisms that have shown promise during small scale fermentation trials

Step 7 - Pro and Homebrew Fermentation Trials - receive and process feedback from homebrewers and craft brewers that used the TYB BETAtest cultures

Step 8 - TYB Production Culture Release - following successful TYB BETArelease, this final step is the release of the large-scale production culture available in any pitch size to homebrewers and craft brewers around the world
