Batch Size: 6 gallons

Mash: 90 minutes at 152 F; 10 minutes at 170 F; sparge at 170 F

12 lb Maris Otter

2 lb White Wheat Malt

1.5 lb Acid Malt 

 

Boil: 60 minutes

1 oz Warrior - 30 Minutes

2 oz Citra - 5 Minutes

2 oz Galaxy - 5 Minutes

 

Yeast:

The Yeast Bay Amalgamation (3-stage starter to build up cell count)

 

Fermentation:

72 F for 2-3 weeks; racked to secondary for 2.5 months

Dry hop with 2 oz. Citra and 2 oz. Galaxy 5 days prior to packaging

 

OG: 1.066     IBU: 58
